In this part of the world, we call it Pancake Tuesday, though the good people at Unilever might like to think of it as Jif Lemon day. It's also known as Shrove Tuesday and In the US, Fat Tuesday or Mardi Gras. Eating fatty and sugary foods seems to be the big thing though as good Catholics should be fasting for Lent from tomorrow. I'm not Catholic but I will be damned if I'm not eating pancakes today.
So today in work, one guy made fluffy pancakes and I made the syrup which is far better than maple syrup in my view.
There are two ingredients needed for the base syrup I make, though I tend to add a third.
The base is cream and brown sugar. I prefer light brown sugar rather than a dark muscovado. Just boil up the cream in a saucepan and add the brown sugar. I'm not giving measurements as such because it does not matter. Let's say 250ml of cream and perhaps 4 tablespoons or brown sugar. Use as much or little sugar as you like.
To make it more interesting, start the boil with some stout (I had some on tap) and then add the cream. You want to boil off some of water in the stout to thicken the syrup and leave behind the chocolate and coffee flavour from the stout. Yum!
